I've never made elderberry wine, but people who do that kind of thing have told me that the flowers make a better wine than the berries.
I don't think there is enough sugar in the elederberries to compensate for the acidity of the sloes.
For the same reason, I don't think you can make wine from sloes. They are far too sour. I have made sloe gin. You pick your sloes, prick them all over, and put them in a bottle with gin and sugar, and leave them (if you do it about now) until Christmas when you have a delcious, purple drink for cold evenings.

i did wonder if it might be possible to make wine using both, or if they would have to be blended after fermentation ...
